Molotov Kitschen + Cocktails the the brainchild of Chef Bo Porytko, previous owner of Rebel Restaurant and Misfit SnackBar. It is a celebration of Eastern European cuisine through the flavors and technique of a long under-appreciated bastion of culinary delights. Chef Bo Porytko was raised in a Ukrainian American home in New Jersey with Ukrainian as his first native language. It was from these deep cultural roots that he first discovered his love of cooking as he folded varenyky (perogi) and stuffed cabbage with his Baba (grandmother) every holiday from the time he was six years old onward. His culinary path eventually led him toward other more radical projects like Rebel Restaurant and Misfit SnackBar where he veered away from his Eastern European foundation and more towards nostalgia inspired global cuisine. It was during this period that Chef Bo began having a reputation for providing some of the most creative and delicious food not just from Denver but the country at large. After earning critical acclaim and a passionate audience along the way, Chef Bo swerved back to his roots when opening Molotov Kitschen + Cocktails. Mixing his signature innovative take on familiar dishes, he then used that same approach to his ancestral cuisine, making the traditional taste brand new. Since then the acclaim has grown exponentially, including on the national stage with multiple James Beard Nominations and a list on New York Times’ best restaurant list. With Molotov Kitschen + Cocktails as his primary culinary focus, this tiny little restaurant has become a destination spot for anyone looking for an Eastern European experience unlike any other.
